Premium low-yield varietal grapes brought to rich maturity under the
 brilliant California sun. Extraordinary flavor, concentrated to subtle
intensity by hand distillation on our antique cognac still.
 Maintained as a single-varietal brandy throughout aging.
Adjusted to bottling proof with filtered rainwater.

We have produced single-barrel, unblended varietal brandies for 7 years.
Five of the releases were distilled from pinot noir wine, and two of them
from Colombard (cognac's grape of choice in the 1850's). The Spirit Journal
called the 1995 V57 Pinot Noir  "perfect brandy"; the Wine Enthusiast gave the
1999 V45 Colombard a 97 score and called it "one of a kind…incredible".

The essential quality of our single-barrel brandies cannot be equalled. Their distinctive balance of subtlety and intensity illuminates the significant advantages of distillation in Northern California: climate; distillation wines made from premium varietal grapes; state-of-the-art vinification; wine maintained in refrigerated stainless-steel holding tanks. These advantages are developed to perfection by our centuries-old methods: an antique still; patient hand distillation; cellaring in casks made from the finest air-dried Limousin oak; adjustment to bottle proof by addition of filtered rainwater. No caramel or sugar is added. These brandies could not have been made anywhere else.

Grapes: varietal wine grapes of such premium quality are simply not used in Europe to produce spirits. Our brandies derive their distinctively rich-fruited flavor from the superb qualities of our distilling wines, not from excessive oak or from additives such as caramel or sugar syrup. 

Climate: sunny days create notable flavor, cool nights maintain acidity needed for structure. No summer rain means perfect grapes at harvest. 

Wine-making & storage equipment: gentle bladder presses, controlled vinification with champagne yeasts, storage in refrigerated stainless steel to maintain superb quality. Our brandies' flavors are exceptionally pure and well-defined. 

Distillation methods: traditional hand-distillation on a small antique cognac still yields pure, subtle flavors. There is no alcoholic harshness, nothing to lessen the quality of the original grape. Our brandies fill the nose and palate: rich, full, smooth, amazingly complex.
